Why did Jason do it so difficult?

She's considered one the strongest heroines in the entire franchise.  If she was that scared, she wouldn't have the strength of mind to pull off pretending to be Mrs. Voorhees.  Scared enough to face Jason head on, but a rat is more scarier? Not buying it. He didn't know where she was.  They could have added anything, her poking her head out too soon, her sneezing, anything.  They went with a rat pissing.  Yes it looks like a lake but is it really that improbable considering the movie it's contained in?

On that note, is it really that improbable for her to pee out of her head? Also, the human body also has a fight or flight response. Her adrenaline would have kicked in and her need to relieve herself or have a sandwich, for that matter, would have been placed on the back burner while she was running from and fighting Jason. You are right, though, it was just a silly way to keep things moving along.....a very silly way. But it worked and kept the chase going, so it wasn't all bad.

If things like needing to relieve yourself go on the back burner, explain what Tommy Jarvis was doing whn he was staring at Jason while trying to light a match.  Silly plot devices aside............

Oh I know what he was doing figuratively, of course! Don't think he was literally shitting/pissing himself.

you can tell that its ginny peeing.. her face lets us know that its her... she makes the "oh shit!" face right as she starts too.. she actually doesnt see the rat peeing.. so why would she make the face otherwise? i think the rat was tossed in (by writers)to give her a reason to pee and have JV notice her hiding uner the bed...and yeah rats dont make piss puddles that big....

but as for the thread topic i also agree that JV was toying with her .. trying to giver her that brief false sense of safety so she would come out of hiding..
